Smoked Cajun Chicken Wings

Fire up the smoker and get ready for wings that are smoky, juicy, and packed with authentic Cajun flavor. Finished with a shake of Bertrand's Cajun Dust, these backyard favorites are guaranteed to disappear fast.

Seasoning Tip:
This recipe is written using Bertrand's Cajun Dust for classic Cajun flavor. Want a little more fire? Swap in Bertrand's Cajun Heat using the same amount to kick things up a notch.

Ingredients

  • 3 lbs chicken wings
  • 2 tbsp olive oil
  • 2 tbsp Bertrand's Cajun Dust (or Bertrand's Cajun Heat)
  • Optional: 2 tbsp grass-fed butter, melted
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your smoker to 250°F.
  2. Pat the chicken wings completely dry and toss them with the olive oil until evenly coated.
  3. Season generously with Bertrand's Cajun Dust, making sure every wing is coated on all sides.
  4. Arrange the wings in a single layer directly on the smoker grates.
  5. Smoke for 1½–2 hours, or until the wings reach an internal temperature of 175–185°F for tender, juicy meat.
  6. If you prefer crispier skin, increase the smoker temperature to 400°F for the final 10–15 minutes, or finish the wings over direct heat for a few minutes.
  7. For even more flavor, toss the hot wings with the melted grass-fed butter and finish with one final light shake of Bertrand's Cajun Dust.
